For non-CS freshers with a career break entering the field of data analytics, your "Professional Background" section in a portfolio document is an opportunity to showcase relevant experiences and skills. Here's what you can include in this section:

Educational Background: Begin with your academic qualifications, including your degrees, institutions, and graduation dates. Mention any relevant coursework in data analytics, statistics, or related fields.
Career Break: Be transparent about your career break and the reasons for it. You can briefly explain what you did during the break, even if it wasn't directly related to data analytics. Highlight any skills or experiences gained during this time that might be transferable to your data analytics career.
Relevant Skills: List the skills you've acquired or developed that are relevant to data analytics. This can include technical skills (e.g., programming languages like Python or R), data visualization tools (e.g., Tableau, Power BI), statistical analysis, and any other skills you've learned, either through coursework or self-study.
Projects: If you've completed data analytics projects, mention them. Even if these projects were part of your coursework or self-initiated, they demonstrate practical experience. Highlight the key insights, methodologies, and tools used in these projects.
Certifications: If you have relevant certifications in data analytics or related areas, list them. Certifications can validate your skills and knowledge to potential employers.
Online Courses: Mention any online courses or MOOCs you've completed in data analytics, machine learning, or statistics. This can be particularly valuable if you're self-taught or trying to fill gaps in your education.

Regarding the question about including all preprocessing steps in your portfolio document, it's not necessary to detail every step of data preprocessing in your portfolio, especially if it's extensive. Instead, you can:

Provide a brief overview of data preprocessing, explaining its importance in data analytics.
Highlight a few key preprocessing techniques or steps you've used in your projects, such as data cleaning, handling missing values, or feature scaling.
Discuss the impact of preprocessing on the quality and accuracy of your analysis.

The goal of your portfolio document is to provide an overview of your background, skills, and relevant experiences. It's essential to focus on what's most important and relevant to the position you're applying for. You can always discuss specific projects and preprocessing steps in more detail during interviews or provide additional project documentation if requested.
